Mom's Rhubarb Crisp

Ingredients:

  • enough chopped rhubarb to fill an 8x8 pan about 3/4 full
  • 1/2 cup white sugar
  • 1/4 cup flour
  • 1/2 cup butter
  • 3 cups oats
  • 3/4 cup brown sugar
  • 1 tsp cinnamon

Preheat oven to 350F. Add rhubarb to an 8x8 pan. Stir in white sugar, then flour.

Melt butter. In a separate bowl, combine oats, brown sugar, and cinnamon. Mix in the butter. The mixture should be a bit clumpy. Spread over rhubarb mixture.

Bake for 50 minutes to an hour. Should be bubbling and crisp getting browned.
